I scream, You scream

Happy Halloween everybody! Instead of trick-or-treating, the bf and I decided stay in and make some treats using his ice cream machine 🙂

Green Tea Frozen Yogurt

3 tsp. green tea tea powder (Matcha)

1 container Fage greek yogurt

1/2 c. to 3/4 c. sugar (depending on how sweet you want it to be)

enough whole milk to bring the entire mixture to 500mL in volume before putting it into the machine

Mix all of the above ingredients together until combined and dump into ice cream machine. Run ice cream machine for about half an hour, or until the yogurt reaches the consistency of soft-serve. Eat or freeze immediately!

Since we happened to have a real vanilla bean on hand, we also decided to go for some vanilla ice cream as well!

Vanilla Ice Cream (adapted from The Perfect Scoop)

1 cup whole milk

3/4 cup sugar

2 cups heavy cream

pinch of salt

1 vanilla bean

6 large eggs

3/4 tsp. vanilla extract

Step 1: Combine milk, half of the heavy cream, salt and sugar in a saucepan, heat up on the stove.

Step 2: Split open vanilla bean and scrap out all the tiny, yummy vanilla seeds inside. Add seeds and vanilla bean pod to the heated milk and cream and let steep for 30 minutes.

Step 3: Separate 5 eggs and keep the egg yolks.

Step 4: Add warm vanilla mixture to egg yolks and stir well until combined.

Step 5: Heat custard to 175 degrees Fahrenheit.

Step 6: Strain the custard and add immediately to the reserved heavy cream. Add vanilla extract to custard mixture.

Step 7: VERY IMPORTANT! Let vanilla custard mixture sit in the refrigerator overnight.

Step 8: Pour custard mixture into ice cream machine and let the machine run for around half an hour, until it becomes ….


MMMMMM … ice cream and fall foliage 🙂
